Pumpkins, pumpkins, and we're off to get pumpkins!

I always look forward to October because the kids can go pick out pumpkins at the pumpkin patch. We typically head out to Bates Nut Farm out in Valley Center, CA. Each year we tend to forget and end up at the patch close to Halloween. By then pumpkins are rotting, flies are taking over, and just not as fun. This year we decided to head out opening weekend hoping for nice variety and some Halloween displays.

It took couple shots to get them both to look at the camera. Nonetheless close enough.
They had so much fun wandering the giant pumpkin field and picking out different types and sizes as well.

Opening weekend is so great, there were food booths, live music, booths to teach kids about agriculture and farming, pony rides, tractor displays, and petting zoo! On top of all that, we got to have Mariposa Ice Cream!

 I remember Ava at this time last year, she wasn't even able to walk yet! Time has flown by so quick! Here is a picture of her at Bates Nut Farm same time last year.

Return of the Gnomes!

The Gnomes have returned! And they have re-landscaped their yard! Or that is what my son believes in. Little did he know, mommy and daddy spent the weekend going to the nursery and buying landscaping and decors to make the gnome yard come alive.

I knew I wanted some kind of "hobbit-esque" front yard which involved putting in Irish moss and moss ground cover. I was able to find a miniature tree that bear berry/fruit similar to a pomegranate. The gnome kit I ordered off Amazon gave the gnomes a nice fence, trellis that will eventually lead to a farm area (hopefully!) , birdhouse, shovel, and wagon.

My husband was nice to chisel out a square hollow in the tree trunk for me to build a window for nighttime magic. My plan is to throw in miniature glowsticks at night so my kids would believe the gnomes are home.

This is the earliest stage of the landscape work. Notice just wood pieces bordering the trunk of the tree.
 When I first put in the Irish moss, there were gap of space here and there that wasn't able to fit the moss, so I used cut branches and rocks to fill the space. Once I did that I started to have more ideas of how I wanted to expand on that. So I went out and got some ground cover moss as filler for those pockets of space and the mini tree.

The wood used as fillers became steps leading up to the house and small borders.

The tree adds a nice touch of height to the front door.

The doorknocker fell off and have been replaced by a screw, which will keep the door from falling as well.
As if I was not satisfied enough with the work in progress. I had to order accessories to make it more lively. Yesterday I had the kids help me add these offerings as a welcome back gift to the gnomes.

Eventually my next plan is to install a chimney and work on a farm area. But since winter is coming, that might not be ideal and may not sustain. Chimney idea is still a go though. That will be saved for another weekend so this will do for now!!

A little from August

This year went by fast, I remember just recently Ava had her first birthday party. Now it is already almost time to plan her second. What theme? What kind of food? What will be her milestone at that time? Here are some recent pictures of Ava and Joseph.

Happy Birthday America!

Today is the last day of the San Diego County Fair, aka "Del Mar Fair". I thought it would be great for both kids to go together. Uncertain of how easy or difficult it would be to manage both kids at the fair myself on a holiday, it was actually SUPER easy! Definitely give credit to Joseph who fed his sister breakfast in the car and pushed her in the stroller the whole time at the fair. That right there is a Super Brother!

The kiddos had a blast seeing farm animals, going to Kiddieland for the rides and enjoyed this year's theme of "Game On!" Overall it was a great success and it makes me feel great that handling two kids alone is not at all a scary thing.





Came home to let the kids get cleaned up and play around in the house. Weather was great!

Ombre cake! Ava's birthday cake test run

Ombre!
When I first saw an ombre cake on Pinterest, I knew immediately that I wanted a cake like that for Ava's first birthday. I've baked lots of cakes before but I didn't just want any boxed cake with pre-made buttercream. Since it was her first, I wanted something light and less sugary so she can have a bite at her party. I decided to do a trial run to make sure I knew the amount I needed, timing, and insanity to put it all together on top of everything else.

I've always preferred asian cakes because its more airy and light and they usually cover the cake with a whipped frosting instead of buttercream. We just like everything with less sugar in general. I found a chiffon cake recipe from Martha Stewart's website. I think we really sets this cake apart is the use of cake flour and safflower oil. I used three 9 inch cake pans with a bake time of 25 minutes in this recipe.

For the cake:


2 1/4 cups cake flour (not self-rising)
1 1/2 cups granulated sugar, divided
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1/2 cup safflower oil
7 large egg yolks plus 9 large egg whites
3/4 cup whole milk
1/2 teaspoon cream of tartar
1 whole vanilla bean, split and scraped, or 2 teaspoons pure vanilla extract
Wilton gel food coloring (I used the ROSE one)

For the whipped cream:


 2 cups cold heavy cream
1/4 cup confectioners' sugar, plus more for sprinkling

Directions

1. Make the cake: Preheat oven to 325 degrees. Whisk together flour, 3/4 cup granulated sugar, the baking powder, and salt. Whisk together oil, egg yolks, and milk in a large bowl. Whisk flour mixture into egg-yolk mixture.

2. Beat egg whites with a mixer on high speed until frothy. Add cream of tartar and vanilla seeds or extract, and beat until soft peaks form. Gradually add remaining 3/4 cup granulated sugar, beating until stiff, glossy peaks form, about 5 minutes. Whisk one-third of the egg-white mixture into batter. Gently but thoroughly fold in remaining egg-white mixture with a rubber spatula.

3. Grease the cake pans, dust with cake flour and line the bottom with parchment paper before pouring in the batter.


4. Transfer batter evenly to three, 9 inch cake pans. I used one half toothpick dipped of the gel food coloring for the first pan, then two half toothpicks for the second, and lastly three half toothpicks for the third. Move in a clockwise motion with a fork until completely colored. My first attempt was short in one pan. Bake until top of cake springs back when touched, about 25 minutes. Let cool on racks until.....cool.


5. Whisk heavy cream and confectioners' sugar in the mixer to a sharp peak. Depending how you style the outside, you can even go for soft peaks for the whipped cream. Once the cakes are cooled, use a cake leveler to slice excess off. Add a think layer of whipped cream between each layer (1/8" to 1/4" would work). Continue to cover the cake and style however you like it. I decided to go with a rustic spackling kind of look.

It is good to always do a test run, you can see in the final I did not mix the coloring in completely. Since this chiffon cake calls for folding in the whipped egg whites, I did not feel comfortable going crazy with it. On top of that I did not want to risk ripping the parchment paper I had in the bottom of the pan. I also did double the whipped cream portion to make sure I had enough to fill in between the layers and the outside since the "spackling" needed a whole lot more whipped cream.

But actually the end result came out pretty nice! The cake was very light and definitely does not feel heavy at all. I might add some strawberries or a mixed fruit to serve with it. I know for the final run, I will definitely add more whipped cream in between each layer, portion the batter in each pan evenly, and mix the gel food coloring together better.
